Foodstuff (2), particularly processed or unprocessed meat or dairy product, is matured in an environment in contact with air while the products are subjected to a low frequency pulsating, polarised, magnetic field. Also claimed is an apparatus for performing the process including a support structure (1) for the products (2) with air cored coils (3) in the structure (1), connected to power sources supplying low frequency pulsed current.
