The present invention relates to an installation for separating the soft parts from the hard parts of shell-fish of the gasteropodous type. It is characterized in that it comprises a tank (20) containing hot water wherein are immersed said shell-fish, an apparatus (30) for separating the soft parts from the hard parts of shell-fish, said separation apparatus being comprised of a substantially horizontal drum (31) which is rotationally driven about its longitudinal axis and means (32) intended to introduce said shell-fish into the lower part of the drum (31), the separation apparatus comprising a separation system (34) mounted inside the drum (31) in its lower portion and intended to separate the soft parts from the hard parts of said shell-fish introduced in the drum, and a collecting system (33) mounted in the upper part of said drum (31) and provided to detach from the wall of said drum (31) the soft parts of shell-fish which have adhered thereto during the separation of their hard parts and a conveyor (33a) for discharging the soft parts outside a drum (31).
