PROBLEM TO BE SOLVED: To provide a method for producing a paste of sea algae and an edible gel which have never existed. SOLUTION: Sea algae swollen with water are mixed with a condensed phosphate and stirred to give the objective paste of sea algae. The paste is incorporated with an organic acid and the pH is adjusted to an acidic range or the paste is gelatinized by adding a calcium salt to give an edible gel in a devil's-tongue state. The paste is blended with a milk constituent to give a custard pudding-like or a Bavarian cream-like edible gel. |
