PROBLEM TO BE SOLVED: To produce an oligosaccharide having biological activity in high yield by treating a reaction residue, which is obtained after the formation of an oligosaccharide from aβ-1,3-glucan using aβ-1,3-glucanase reaction, under alkaline conditions and further reacting the resultant reaction product with theβ-1,3-glucanase. SOLUTION: An oligosaccharide is produced in high yield from the residue of aβ-1,3-glucanase reaction by subjecting aβ-1,3-glucan (e.g. curdlan) to aβ-1,3-glucanase reaction, which is carried out at pH5.5 at a reaction temperature of 55 deg.C for 44hr using a laminaripentahydrase produced by Streptomyces Matensis DIC-108 (FERM BP-253) to produce an oligosaccharide, treating the resultant reaction residue with an alkali by dissolving it into an alkaline aqueous solution, adjusting the pH to 7.0, desalting the solution, further treating the resultant solution with aβ-1,3-glucanase consisting of the laminaripentahydrase under the same conditions as above.
