PROBLEM TO BE SOLVED: To obtain soy sauce suitable for processed foods or dishes not hoping for strong soy sauce odor, by subjecting soy sauce to reverse osmosis membrane treatment to separate it into a permeated liquid and a concentrate followed by mixing them together to efficiently deodorize the soy sauce. SOLUTION: A soy sauce such as naturally brewed one is treated with a reverse osmosis membrane of e.g. tubular shape to remove isobutyl alcohol, n-butyl alcohol, isoamyl alcohol, etc., each as an ingredient of soy sauce odor and separated into a permeated liquid and a concentrate. Subsequently, part or the whole of the permeated liquid is mixed with part or the whole of the concentrate, thus accomplishing the objective deodorization of the soy sauce. |
