The invention concerns a process for manufacturing a secondary emulsion consisting of droplets of a phase A that are dispersed in phase B, A being immiscible in B, from a polydispersed primary emulsion of identical formulation, made up of droplets from the said phase A dispersed in the said phase B, the droplets of the secondary emulsion having a diameter in all cases inferior to the diameter of the droplets of the primary emulsion. The characterizing feature is that the primary starting emulsion is viscoelastic, and that the said primary starting emulsion is subjected to a controlled shearing action in such a way that maximal shearing is applied to the emulsion as a whole. |
