A film article suitable for cook-in packaging and a method of cooking a food product are described. The film article contains a food-contact layer which includes PVOH and a retained food product-modifying substance. The PVOH is substantially water insoluble, and the food-contact layer including such PVOH is capable of transferring at least a portion of the modifier to a food product in contact with the food-contact layer. The film article is particularly well-suited for use as a cook-in film. In this regard, it is capable of sorbing and then transferring a modifier to a packaged food product in sufficient quantity that a separate, post-cooking application of modifier to the food product is unnecessary. Thus, only one package is necessary to cook, ship, and store the food product until it is to be consumed or further processed for retail display. Contamination risks associated with handling and repackaging a cooked food product can be altogether avoided.
