The machine has a cutter working in a frame (1) supporting the meat (3), the latter being moved during the cutting operation. The cutter belt (15) runs round two or more pulleys (8, 9), at least one (8) of which can be driven. One pulley (9) at least can be movable towards the other, being held by a mechanism (10, 13) in the position where the belt is taut, typically using a spring whose tension is adjustable. The drive mechanism (7) can be clear of the part (15a) of the belt forming the cutting run. The plane in which the belt works can be at an acute angle to the direction of movement of the meat, allowing the latter to be moved lengthwise behind part of the belt where no cut is made.
