PROBLEM TO BE SOLVED: To inexpensively obtain 3-O-β-D-galactopyranosyl-2-acetamido-2-deoxy- D-galactopyranose useful as a synthetic intermediate for sugar chain of a substance of ganglioside series by acting onβ-glucosidase originating from almond. SOLUTION: (A)A lactose or nitrophenyl-β-D-galactopyranoside and (B) N- acetylgalactosamine are used as raw materials and the components A and B are reacted with (C) an inexpensiveβ-glucosidase originating from almond to cause galactose transfer reaction and thereby, the raw material component B is transferred to galastose.β-Gluosibase originating from expensive pig submaxillary gland and cow spermary is not required.
