PROBLEM TO BE SOLVED: To obtain an immunologically activating peptide mixture originated from soybeans, substantially not decomposed in digestive tracts, not acting in a normal state, capable of enhancing early responsibility to microbial cells, etc., and useful for foods, medicines, etc., and to provide a method for producing the peptide mixture. SOLUTION: This immunologically activating peptide mixture contains <100pg/mg protein of a LPS(lipopolysaccharides) obtained by hydrolyzing soybean protein with a pepsin-like enzyme or a trypsin-like enzyme, and has a 15% TCA-soluble protein content of 76% and a Mϕ (macrophage) complement C3 production-stimulating index (SI) of >=2. This method for producing the peptide mixture comprises subjecting a soybean milk to an isoelectric point precipitation treatment, hydrolyzing the obtained soybean proteins with a pepsin-like enzyme and a trypsin-like enzyme in an aqueous system, and subsequently removing soybean husks to reduce the content of the LPS to <100ps/mg protein or purifying the hydrolyzate produced with the pepsin-like enzyme or trypsin-like enzyme by one or more means selected from a mol.wt. fractionation method, an ion exchange resin adsorption method and a reversed phase distribution method. |
