The present invention discloses how to generate steam in an apparatus to prepare filtered coffee, it is proposed a design comprising a water storing container and a device to separate water and steam. A heating means is provided to heat water and to generate steam. Separating device comprises an inlet plugged in to heating device outlet and an outlet plugged in to a steam nozzle. Water storing container comprises an inlet connected to a fresh water tank and an outlet connected to heating means inlet. Besides, a regulating member is provided nearby water storing container outlet; regulating member restricts, during steam generation, water quantity fed to heating means by unit of time. By means of such design, dry steam can be generated, particularly adequate to prepare a cappuccino beverage.
