SOLUTION: This method for producing beaten egg comprises charging an egg liquid thickened with a gummy substance, a thickener, etc., into hot water through small holes having a diameter of approximately 4.0-5.0mm, leaving the mixture so that the charged egg liquid is rapidly and uniformly solidified, and subsequently stirring the solidified egg in the hot water. The leaving time is preferably approximately 1-3min, when the hot water has a temperature of 90-97 deg.C and a pH of 3.0-5.0.
