PROBLEM TO BE SOLVED: To prepare a processed food such as a bakery or a cereal food, excellent in water retainability and taste, having high acceptability and good in lipid stability and nutritional values by roasting linseeds, adding the roasted linseeds to a food raw material and processing the resultant mixture. SOLUTION: Enzymes such as lipase are deactivated and saccharides contained in linseeds are made to easily elute by roasting linseeds which can not completely be baked when baked after directly mixing to a food raw material. Subsequently, the roasted linseeds are added to a food raw material and the obtained mixture is processed into bread, cakes, etc. |
