PROBLEM TO BE SOLVED: To obtain a cholesterol lowering agent and a cholesterol lowering food capable of reducing the blood serum cholesterol. SOLUTION: This cholesterol lowering agent comprises a shell fine powder of Paralithodes camtschatica having <=50μm particle size of median diameter. The fine shell powder of the Paralithodes camtschatica is obtained by drying a shell prepared at the time of shucking processing of the crab, powdering the resultant shell with a pulverizer, further pulverizing the resultant powder with a ball mill and providing a powder having <=50μm median diameter. The amount of the cholesterol lowering agent added into a food is 2-6% based on the total amount of the food (e.g. a fish meat processed product, a livestock meat processed product, pastas, noodles or shao-mai). No sandiness is caused in the food even when adding the cholesterol lowering agent thereto and application thereof to the food can readily be made. Since the treatment for converting the crab shell into chitin-chitosan with an acid or an alkali is not required, the shell fine powder is industrially advantageous. |
