PROBLEM TO BE SOLVED: To provide a method for producing vegetable powder by removing fiber contents, crushing cell walls and subsequently pulverizing only the extract. SOLUTION: This method for producing vegetable powder comprises a process for blowing air on the vegetables of raw materials to scatter water from the vegetables subjected to a washing process 1, a process for grinding the water- removed vegetables to crush the cell walls of the vegetables, a process for squeezing the ground vegetables, separating the juice from the vegetable pieces, and subsequently filtering the juice to remove the fibrous contents, and a process for adjusting the pH of the juice, concentrating the juice and subsequently pulverizing the concentrated juice. |
