<p>PROBLEM TO BE SOLVED: To obtain a new yeast having ethyl alcohol resistance and dioxanes resistance, hardly causing autolysis at the end of fermentation, sensibly improved in fragrance, excellent in fermentation performances, providing a clean and refreshing refined rice wine, low-class distilled spirits, etc. SOLUTION: This new strain has ethyl alcohol resistance and dioxanes resistance, belongs to the genus Saccharomyces cerevisiae [e.g. Saccharomyces cerevisiae 9D27 strain (FERM P-15,497), etc.], hardly causes at the end of fermentation, is sensibly improved in fragrance, excellent in fermentation performances and is useful for producing alcoholic beverages such as refined rice wine and low-class distilled spirits of clean and refreshing liquor qualities. The new yeast is obtained by selecting Saccharomyces cerevisiae which is capable of being cultured in a medium containing a dioxane and showing dioxanes resistance from a population of yeast cells.</p> |
