PROBLEM TO BE SOLVED: To obtain a frozen fried food capable of obtaining coating exhibiting a crisp and melting well in a mouth like eat feeling similar to that obtained directly after frying even cooked by heating with a microwave oven. SOLUTION: This method for producing a frozen fried food for cooking by heating with a microwave oven is to use a starch consisting of an ungelatinized starch and a gelatinized starch as a main component, add a foaming-type plant protein and water, agitate and mix to form a batter having 0.35-0.6 specific gravity, then after attaching the batter to a food material, fry the food material crumbed with bread crumbs, and then freeze the fried food. The batter mix contains 65-85wt.% ungelatinized starch, 2-20wt.% gelatinized starch and 4-25wt.% foaming-type plant protein. |
