A frozen food product comprising fruit pieces and satisfying at least one of the following conditions: (i) unripened fruit pieces are used; (ii) the ratio of solubility index for ripe fruit to the solubility index of the fruit pieces is more than 1.1; (iii) the drip loss of the fruit pieces is less than 5 wt.%. Preferably the fruit is red fruit e.g. strawberries. |
