PROBLEM TO BE SOLVED: To provide the half-dried foods of green leaf vegetables and its production. SOLUTION: Green leaf vegetables of 2500kg are put into a barrel and salt water of density 5 to 7% is added to salt. In order to get a good color at the time of finish, the salting time is about 1.2 to 1.5 hours. The salted green leaf vegetables are taken out from the barrel and washed by water. The washed green leaf vegetables are sliced twice by the size of 1 to 3mm manually or by means of a slicer. The sliced green leaf vegetables has 75 to 80% of its moisture dehydrated by a centrifugal rotary dehydrator or a pickles presser. Seasoning materials such as dried seaweeds, dried perilla leaves, dried young sardines, roast sesame, salt, sugar, condiment are mixed to the half-dried green leaf vegetables. |
