PROBLEM TO BE SOLVED: To obtain a food effective for inhibiting the absorption of a mutagenic substance, produced by using a lactobacillus having high adsorptivity, etc., of a mutagenic substance, capable of adsorbing Trp-P1 existing in the roast meat over a wide pH range, effective for preventing and suppressing cancer, having excellent safety and suitable as a health food, a nourishing meal, etc. SOLUTION: This food is produced by using a lactobacillus having high mutagenic substance adsorbing property and/or absorption inhibiting property such as Streptococcus thermophilus OLS 3059 (FERM P-15487). The Streptococcus thermophilus OLS 3059 is usable also as a yogurt starter. |
