PROBLEM TO BE SOLVED: To provide a process for efficiently producing a raw material for a fishery paste food such as Kamaboko (boiled fish paste) having high quality from a frozen fish paste using exclusively a silent cutter and provide a silent cutter to be used in the process. SOLUTION: A paste product raw material having high gel strength is produced by carrying out the chopping, mixing and stirring of ground meat raw material by the normal rotation of a cutter blade and performing the last step by reversely rotating the cutter blade at a low speed, thereby efficiently kneading the raw material with the broad back part of the cutter blade. The loosening of the cutter blade 4 of the rotary shaft 3 of the silent cutter caused by the repetitive normal and reverse rotations is prevented by screwing a tightening nut 6 to the rotary shaft 3 and integrally tightening the nut 6 to a collar 5 engaged with the rotary shaft 3. |
