PROBLEM TO BE SOLVED: To obtain a Roesti-like food product which can be taken out of a packaging vessel without form collapse and gives only the texture of vegetables since the binding is natural by admixing a specific binder to finely cut vegetables, filling a vessel with the mixture, tightly sealing and heating the vessel. SOLUTION: A sticky material comprising (A) wheat flour (suitably soft flour), (B) dried white egg and (C) a water phase separation inhibitor (suitably sodium casein or xanthan gum) is kneaded with water or an aqueous liquid to make a paste or batter. This sticky material is combined with finely cut vegetables or small balls of vegetables Then, packaging vessels are filled with the mixture, tightly sealed and treated with heat preferably at 60-140 deg.C under a pressure of 1-2.5kg/cm<2> for 40-5 minutes. If the whole of the sticky material is regarded as 100, the weight ratio of A/B/C is preferably (45-70)/(30-50)/(0.06-5). The weight ratio of the sticky material to the vegetables is preferably 1/(10-20). The sizes of vegetables are preferably 5-30mm. |
