PURPOSE:To obtain the title water-soluble substance causing neither bitterness nor a fishy small, adding a chitosan solution containing water-soluble protein, peptide and amino acid, adjusting the solution to alkalinity and removing pre pared aggregate. CONSTITUTION:An aqueous solution containing 1-60wt.% one or mixture of water-soluble protein, peptide and amino acid is blended with 1-50wt.% solution containing 0.1-10wt.% chitosan while stirring. Then the pH of the system is adjusted from neutrality to alkalinity and prepared aggregate is filtered and removed. |
