PURPOSE: To effectively remove white tyrosine precipitated in a food. CONSTITUTION: A tyrosine containing food is mixed with lactic acid bacteria containing tyrosine decarboxylase and tyrosine is hydrolyzed with the added lactic acid bacteria to remove tyrosine. The lactic acid bacteria containing tyrosine decarboxylase hydrolyzes tyrosine hardly soluble in water into tyramine. When a carbon dioxide gas is removed from the structural formula of tyrosine, it is made into tyramine soluble in water. Since anaerobic lactic acid bacteria remove a white solid substance of tyrosine, a food is immersed in an environment to which air is not supplied, such as a culture solution of lactic acid bacteria, packed into a packaging bag so that a white solid substance of tyrosine can be effective removed. |
