A method is described for producing a masa flour or corn flour from degerminated kernels of corn. Preferably, the process involves the steps at degerminating kernels of corn so as to separate the horny endosperm from the remainder of the corn kernels, the horny endosperm is then hydrated so that an amount of water equal to between about 32 % and about 42 % by weight of the total horny endosperm particles is absorbed, after hydration the hydrated horny endosperm particles are then cooked which results in the rupturing of some of the horny endosperm particles and the gelatinization of some of the starch particles contained in the horny endosperm particles, following cooking the horny endosperm particles are then rapidly dried to form the masa flour. The masa flour produced by this method may be used in the production of food products such as corn tortillas, taco shells and corn chips. |
