PROBLEM TO BE SOLVED: To obtain a yolk-improving agent containing a glutaminase-containing enzyme originated from microorganism of the genus Bacillus, effective for imparting yolk with heat-resistance without varying the original taste, properties, etc., of yolk and useful, e.g. for the production of mayonnaise, etc. SOLUTION: This agent contains a glutaminase-containing enzyme originated from microorganism of the genus Bacillus as an active component. Preferably, yolk is treated with 0.1-1.0GTU/mL (in terms of glutaminase activity unit) of the yolk-improving agent to improve the heat-resistance of yolk and mayonnaise is produced by using the yolk treated with the yolk-improving agent. |
