PROBLEM TO BE SOLVED: To obtain the above new gene originated from a Pseudomonas fluorescens, coding a lipase remarkably acting on highly unsaturated fatty acid esters, and used for producing the enzyme useful for modifying unsaturated fatty acid esters contained in fish oils, etc. SOLUTION: This new DNA fragment has the genetic information of a protein having a lipase activity remarkably acting on highly unsaturated fatty acid esters and containing an amino acid sequence of the formula or a part of the amino acid sequence and an amino acid sequence homologous to the sequences. The lipase produced from the DNA fragment can hydrolyze triglycerides containing highly unsaturated fatty acids such as elcosapentaenoic acid and docosahexaenoic acid, and is useful for the hydrolysis, modification, ester interchange, etc., of highly unsaturated fatty acid esters contained in fish oils, etc. The DNA fragment is obtained by extracting a chromosomal DNA from Pseudomonas fluorescens 3-80 strain (FERM P-14166), and subsequently screening the extracted DNA by a PCR method using a primer. |
