PROBLEM TO BE SOLVED: To produce an unknown seasoning substance derived from rice. SOLUTION: This water-soluble sphingophospholipid is derived from rice and has a basic skeleton consisting of sphingoid, a phosphide group, a sugar chain with a degree of polymerization of sugar in a range from 15 to 25, and a fatty acid. The production process comprises immersing a layer of polished rice in a yield of 97-71% in water or a solvent containing water, subjecting them to solid-liquid separation to give an extract, fractionating the extract to give a fraction with a molecular weight of 3,000 to 4,800, and purifying the fraction, if necessary. |
