PROBLEM TO BE SOLVED: To obtain dried shark fin similar to that with its high-grade original shape retained as a kind of Chinese dish by using myofibrous shark fins low in commodity value. SOLUTION: This dried shark fin resembling the high-grade shark fin in all terms of the gustation, palate feeling and shape is obtained by making use of the shark's gelatinous inner skin identical in nature with the genuine shark fin through arranging myofibrous shark fins 2 in parallel with one another followed by monolithically bonding them to a sheet 1 made with shark's gelatinized inner skin. In the above process, the inner skin is dried once and then heated and swollen into the sheet 1. |
