<p>PROBLEM TO BE SOLVED: To provide the storing method for fruit, roots, etc., which dispense with ventilation and humidity control and, specially, strict temperature control, reduces the facility cost, eliminates the denaturing of stored food due to changes and irregularities of an atmosphere, and enables storage for a longer period than CA storage and ice temperature storage. SOLUTION: Perishable food such as fruit is dipped in >=6% ethyl alcohol at a temperature of <=-5 deg.C for 5-60 minutes and then stored at a temperature of <=-10 deg.C.</p> |
