A hydrocarbon solvent free process for extracting phytochemicals from a raw material, includes the steps of (i) comminuting the raw material, (ii) treating the comminuted raw material with an agent effective for digesting the fiber content of the raw material, and (iii) separating the digested raw material by microfiltration into a phytochemical-enriched fraction and a phytochemical-depleted fraction wherein the digestion products are concentrated within the phytochemical-depleted fraction. |
