The baking trays arranged one above the other on trolleys which can be loaded into the chamber of a baking oven, through which hot air flows horizontally, each have a cover in the form of a hood. This m ay be a loose detail which can be positioned above the tray so as to form a channel between its upper surface and the bottom of the tray above, through which the hot air is guided. Alternatively, the hoods may be fixed on the trolleys beneath which the trays slide into place on rails, or the covers may be positioned appropriately inside the baking oven. The hoods equalise the under and over heating so that bread can be baked successfully, by preventing the direct transfer of the heat to the upper surface of the goods.
