PROBLEM TO BE SOLVED: To obtain tasty preserves, comprising a fruit of Myrciaria dubia in the whole state, etc., abundantly containing natural vitamin C, minerals, pectic substances, etc., having a high nutritive value and excellent in flavor and texture. SOLUTION: The preserves of a fruit of Myrciaria dubia are obtained by adding and mixing 0.5-0.8 pt.wt. sugar, 0.0075-0.015 pt.wt. pectin and 0.6-1.2 pts.wt. water to 1 pt.wt. fruit of the Myrciaria dubia in, e.g. the whole state or a stoned state, thermally, sterilizing the resultant fruit thereof at 95 deg.C for 10min and then cooling the thermally sterilized fruit. |
