The cheese drier comprises a trolley supporting cheese wicker racks which rotates around a vertical axis. The cheeses rotate in a natural or forced air current. The trolley is rotated by a reduction motor (4), having a rotational speed of 3.3 rpm, placed on top of the drier enclosure (3). The trolley is held to rotate by a horizontal angle ironed frame (5) which enables the support trolley to be inserted and extracted. A transverse plate, welded and centred on the frame, has a sleeve centred and screwed onto the plate in which the motor is housed. A variable speed centrifugal fan (14) and a vertical ventilation sleeve (15) provides the air flow.
