PURPOSE:To prepare a cooked rice food having improved taste with no or decreased characteristic smell of old rice harvested in past years by adding vacuum-distrillation fraction of a plant of family Theaceae in the preparation of a cooked rice food from rice harvested in past years. CONSTITUTION:Cooked rice food such as parboiled rice, gelatinized rice, freeze- dried rice or expanded rice is prepared by conventional method using old rice as at least a part of the raw material. In the above process, a dry-distrillation fraction of a plant of family Theaceae such as tea, sasanqua or camellia distilled out by the dry-distrillation of mainly the leaf of the plant under reduced pressure at 180-200 deg.C/20mmHg is added to the production system at an arbitrary stage from the start to the end of the preparation. |
