PURPOSE:To safely produce edible oils and fats enhanced of unsaturated degree by using hydrogen occluding alloy containing a compound having hexagonal CaCu5-type crystal structure as a main phase and partially dehydrogenating of edible oils and fats. CONSTITUTION:Edible oils and fats such as soybean oil, hardened soybean oil, corn oil, rape oil, palm oil or coconut oil is charged in reaction tank together with hydrogen occluding alloy previously subjected to activation treatment and deaerated, then the tank is filled with inert gas such as Ar under a pressure of 0-3kg/cm<2>, thus said oils and fats are held at about 120-200 deg.C for 10-720min with stirring to perform dehydrogenation reaction, or sealing the hydrogen occluding alloy in a plate-type column capable of cooling the hydrogen occluding alloy by jacket and circulating the oils and fats held at about 120-200 deg.C for 10-720min to perform dehydrogenation reaction. Resultant partially dehydrogenated oils and fats are cooled immediately after finish of the reaction and recovered. |
