PROCESS FOR PRODUCING AND IMPROVING LIQUOR USING CHARCOAL

PROBLEM TO BE SOLVED: To provide a process for producing a liquor having excellent flavor and mellow taste with little harshness and provide a liquor-improving process for imparting an unsavory liquor with good flavor and mellow taste and removing harshness from the liquor. SOLUTION: This process for producing a liquor and improving the quality of the liquor comprises the contact of the liquor with charcoal and the removal of the charcoal from the treated liquor. The charcoal is produced by carbonizing at least one kind of wood selected from the trees of the genus Quercus, the genus Acer, the genus Ulmus, the genus Camellia, the genus Fraxinus and the genus Carpinus at 700-1,100 deg.C and subjecting the carbonized wood to washing, boiling, sterilization and drying.
