PROBLEM TO BE SOLVED: To obtain an instant water-absorbable rice capable of giving delicious cooked rice having the flavor just after cooked by dry heating cleaned rice after washing to easily absorb water, adding water to the cleaned rice, put the rice in a pressurizing device, heat the rice under a specific pressure and cooling the rice to absorb water. SOLUTION: This instant water-absorbable rice corresponding to a microwave oven and capable of giving tasty rice having flavor just after cooked by treating with a microwave oven, etc., is obtained by putting washed rice spread on a wire net, dry heating the rice by blowing 120 deg.C hot air for 8 minutes from under to making the rice easily water-absorbable, putting the dry heat-treated cleaned rice and water in a vessel in a ratio of 80-130 pts.wt. of water over 100 pts.wt. of the cleaned rice, putting the vessel in a pressurizing device such as a retort pot, raising temperature of water to 60-80 deg.C by gas heat, electric heat, system, electromagnetic waves, etc., under 0.1-3kg air pressure and/or steam pressure and bringing the rice to absorb water, if needed, by cooling under keeping the pressure. |
