Treatment of hard wheat grains comprises: (i) grading the grains into batches, the thickness of the grains being e/!0.40 mm, where e is the median thickness measured from the groove of the grain to its back; (ii) husking the grains; and (iii) subjecting them to heat treatment at above 140 deg C until their colour changes from ochre to yellow. Also claimed is a batch of hard wheat grains which, when treated in boiling water for mins., followed by draining and leaving in a water-satd. atmosphere for 15 mins., have a hardness standard deviation of less than 5 and an elastic recovery standard deviation of less than 8, these being measured on a Chopin viscoelastographer. The batch of grains prior to cooking pref. has a colour, as measured by a Minolta CR-20 chromameter using the L* a*b system (L being the brightness variable, a the red index, and b the yellow index), such that the mean L is greater than 65, the mean a is less than 4 and the mean b is less than 21. When soaked in 1.7% potassium hydroxide soln. for 24 hrs. prior to cooking, the grains appear translucent. |
