The present invention discloses a process for the preparation of crystal-type instantaneous noodles, said process comprising: a) preparing a dough of crude mung-type bean starch, or crude potato starch or any mixture thereof by adding hot water and mixing to partially pre-gelify the starch, b) extruding the dough to form noodles, c) vaporizing the noodles, d) whitening the noodles so vaporized with hot water, e) cooling the whitened noodles with freezing water to allow starch retrogradation, and f) drying the noodles to a humidity content lower than 15 percent. |
