An assembly for de-boning meat esp. turkey thighs which have been dismembered from the bird, where the thigh is held in place by side-grips (5) end-on against a support (1) while a powered plunger (11) ejects the bone (6). The support (1) and side-grips (5) function together as a grip (3) on the meat; and the removed bone (6) is ejected by means of a powered plunger ejection rod (11) through a passage (4) in the support (1).
