<p>PURPOSE:To easily remove astringency from green banana by applying an alcohol to a green banana, leaving standing the banana in a state sealed in a container and subjecting the banana to post-ripening process. CONSTITUTION:A green banana is wetted with an alcohol (preferably ethyl alcohol having a concentration of about 70-50vol.%), sealed in a container, left standing for about 1-3 days and subjected to post-ripening process. The astringency elimination degree is easily improved without the problem of ignition and explosion hazard.</p> |
