摘要 PROBLEM TO BE SOLVED: To obtain a new bacterium of genus Bacillus capable of producing glucosyl branching hydrolase, capable of cleaving a glucosyl branch bonded by α-1, 6 bond, acting on a mixture of glucose with a glucide and efficiently producing a glucosyl branched saccharide by culturing the bacterium belonging to genus Bacillus. SOLUTION: This new glucosyl (α 1 → 6) branching hydrolase can be produced from a bacterium belonging to genus Bacillus, has about 6.5 optimum pH, about 45 deg.C optimum temperature and the temperature stability up to about 50 deg.C, is capable of acting on a mixture of glucose with a glucide such as a cyclodextrin, a starch, dextran, pullulan, a cellulosic polysaccharide, a polysaccharide hydrolyzate, a trehalose, sucrose and a lactose and efficiently producing a glucosyl (α 1 → 6) branching saccharide and has properties of inhibiting the activities with a tris buffer. The enzyme is obtained by culturing Bacillus sp. KW-14(FERM P-15314), Bacillus sp. KW-17(FERM P-15315), etc., and collecting the resultant product from the culture solution.
