PROBLEM TO BE SOLVED: To obtain the subject substance useful for preventing and treating diabetes and preventing fatness, strong in inhibitory activity against an amylase such as human pancreatic α-amylase, effectively suppressing rise in a human blood sugar value and controlling insulin secretion, comprising a specific protein. SOLUTION: This amylase inhibitor comprises a protein (A) composed of two subunits of amino acid sequence of the formula. The protein A, for example, is obtained by extracting wheat (flour) or wheat gluten with water, a diluted acid, a dilute alkali or a hydrous alcohol, mixing the prepared extracted solution with a polysaccharide to form an insoluble complex material with the protein A, fractionating the complex material from the solution, then separating and removing the polysaccharide from the complex material, collecting a solution containing the component A, treating the solution with a cation exchanger and recovering the protein A from a fraction not adsorbed on the exchanger. |
