LACTOBACILLUS ACIDOPHILUS HAVING HIGH ACTIVITY AND ITS USAGE

PROBLEM TO BE SOLVED: To obtain a high active strain of Lactobacillus acidophilus capable of exhibiting high acid producing activity and high proliferation in a reduced defatted-milk medium and producing excellent fermented dairy products having a fine and smooth texture and a mild taste at a low temperature in a short time. SOLUTION: When cultured at 39 deg.C for 8hr in a reduced defatted-milk medium having a defatted-milk content of 11.5wt.%, this Lactobacillus acidophilus SBT 0316 (FERM P-15299) has an oxygen concentration of >=1.0% and a viable cell number of >=1.0×10<9> (cfu/g), and the Lactobacillus acidophilus exhibits high acid-producing activity and high proliferation even without using a growth stimulation substance. Further, a fermented milk is preferably produced using a fermented milk starter of the high active strain of Lactobacillus acidophilus.
