The present invention provides recombinant or isolated nucleic acid encoding an alpha -glucosidase enzyme, especially those nucleic acid sequences encoding a plant alpha -glucosidase enzyme. Antisense nucleic acid is also provided, as well as the use of both the isolated or recombinant sequences and the antisense sequences. Uses of the invention include enhancing and reducing expression of alpha -glucosidases and the provision of novel starches.
