A wort boiling device is described having a wort copper (1) and at least one separate heating circuit, situated outside the wort copper and provided with a heat exchanger (2) to heat and/or boil the wort, the heat exchanger (2) containing an arrangement of heat exchange tubes to pass the wort through the heat exchanger. The aim of the invention is to create a heat exchanger which is adjustable to different evaporation parameters to match it to different types of beer. This aim is achieved in that the arrangement of heat exchange tubes is provided with tube branches and valves in such a manner that the wort can be passed through the heat exchanger in pathways of differing lengths.
