PROBLEM TO BE SOLVED: To produce the subject compound useful as a perfumery material, liquid crystal material, etc., in high efficiency by treating a racemic 2-alkanol having a specific carbon number with cells (or treated cells) of a yeast of the genus Candida having alcohol oxidizing potency and separating the reaction product. SOLUTION: The objective (R)-2-alkanol is produced in high efficiency by bringing a <=9C racemic 2-alkanol (e.g. 2-pentanol) into contact with cells (or treated cells) of a yeast of the genus Candida having alcohol oxidizing potency [e.g. Candida boidinii SA051 (FERM BP-4893)] to oxidize exclusively the (S)-2- alkanol in the racemic 2-alkanol into 2-alkanone, centrifuging the reaction product to remove the cells, extracting with ethyl acetate, etc., concentrating the extracted liquid under reduced pressure and purifying the concentrate by silica gel column chromatography. |
