A composition enhanced in sodium chloride taste which comprises a food or beverage containing a less than normal amount of sodium chloride, and a sodium chloride taste potentiating amount of an encapsulated ammonium salt especially wherein the ammonium salt is obtained from ammonia formed during protein hydrolysis.
