A process is described for the preparation of oligosaccharides, in particular inulin, which are virtually free from mono- and disaccharides, such as glucose, fructose and sucrose, in that the oligosaccharide is subjected to hydrolysis in the presence of a solid acid catalyst, in particular a strongly acid cross-linked polystyrene resin, and then separated from monosaccharides (glucose and fructose) by column chromatography. |
